Babalio has been around longer than most pop-ups and we’ve had many Lunar New Year dinners outlining the classics - long long longevity noodles, this for luck, that for fortune. Like Taiwanese cuisine, the New Year menu has evolved to incorporate new traditions, diverse families, various influences, and a growing demand for convenience. This year, there’s a less-than-traditional menu that fully reflects new traditions, evolving partnerships, and a celebration of our restaurant family. This year’s menu will take place at my new restaurant home, Pidgin Cooperative, and this menu fuses the influence of our shared island cuisines — Taiwan, Hawaii, and the Philippines, and our love of the sea.
